Food Service Coordinator
Job Summary:
Performs a variety of working level skilled duties in planning, preparing and serving food items to the detention facility inmates.
Duties Performed:
Assists in planning and organizing the preparation, and cooking of food for resident inmates and institutional employees; Helps in maintaining culinary equipment, supplies and work areas, will plan menus and determine amounts to be prepared; Inspects and maintains food handling and safety standards; maintains records and prepares reports; receives and documents deliveries, verifies required quantities and quality of items; Maintains kitchen sanitation standards according to established State Health Codes; Maintains the security and control policies within the controlled area of responsibility; Prepares special diets to residents as prescribed by physicians; Accounts for kitchen utensils and maintains a daily log of the same; performs other related duties as required.
Supervision Given: Provides close supervision to inmate workers assigned to the food service.

Machines, tools and equipment used:
All kitchen equipment used in a modern food preparation facility to include, stoves, ovens, mixers, dishwashers, hand held utensils such as spatulas, knives, etc.; The use of all sanitation equipment necessary to maintain a sanitary and clean working environment. Use a personal computer in such applications as Word and Excel.
Working Conditions:
Functions of the position generally performed in a controlled environment. Many factors of the work pose a high degree of hazard uncertainty.

Physical requirements:
Daily physical demands requiring standing, walking, stooping, reaching, touching and lifting exist for many of the job functions. Physical readiness and conditioning may be a condition of job retention. Will use many various levels of mental application required, i.e., memory of details, emotional stability, discriminating thinking, and creative problem solving. Will use continuous motor skills, daily.
Educational requirements:
Must have a high school diploma or equal. (Any culinary classes related to nutrition, food service, food service management and sanitation, desired.)
Special skills:
Must possess a current food handlers permit, or obtain one within six (6) months of hire. Working knowledge in operating kitchen appliances and equipment. Have some knowledge of nutrition, planning, working and baking techniques; management of food preparation and service; menu planning and computation; typical institutional policies such as security and emergency procedures. Ability to write accurate and grammatically correct reports or narratives; read and follow recipes; establish and maintain effective working relationships with supervisors, co-workers, and inmate workers; follow verbal and written instructions; communicate effectively verbally and in writing; work under the daily stress of potential hostile and confronting situations within the detention facility environment. Must possess a valid Driver’s License and successfully complete an Idaho State Department of Motor Vehicles Record Check, and any other criminal background check as deemed necessary by the Sheriff.
Experience required:
Two years of experience in institutional restaurant, or related food service experience, or any combination of experience and/or education considered as an equivalent.
Training required after hiring:
Participates in continuing education as required by the Sheriff.
